PLANT
It is a very hardy, robust and rustic herbaceous perennial plant of the Asteraceae family. It is an ornamental plant that may remind you of the famous “Coca Cola” soft drink; in fact, its leaves have a scent that closely resembles this soft drink. Its silvery foliage can reach a height of about 150 cm. It produces yellow flowers in June. It is a plant rich in essential oils.
CULTIVATION
It is suitable for cultivation in dry, sunny soil and should be watered regularly. In winter, in continental areas, the aerial part disappears to vegetate in the following spring.
COLLECTION
The leaves can be used either fresh or dried. The branches can be gathered and dried in a cool, shady place, spreading them out in thin layers or hanging them in bunches. Store them away from light and moisture.
USES IN THE KITCHEN
Mostly the shoots are used, as the leaves have a bitter taste. The tips taste like cola, which is why it is also called “Coca Cola bush”. In small quantities the leaves with their slightly spicy flavour are used to flavour herbal liqueurs, herbal teas, candies, chicken fillings and grilled meats. The shredded leaves are excellent in meat and fish carpaccio.
