PLANT
Tall, upright pepper plant with short internodes. The chillies produced are 14-16 cm long with smooth flesh, bright red in colour and very hot when fully ripe. It maintains a high degree of pungency even in the winter period and with green fruit. Cayenne pepper is excellent for sun-drying, for the preparation of hot paprika, hot oil or even to be ground for powdered storage.The very thin chillies are suitable for drying to be used whole or ground, but can also be preserved by freezing, pickling in oil or vinegar. Its degree of hotness ranges from 30,000 to 50,000 on the SCOVILLE scale.
CULTIVATION
When cultivating hot peppers, it should be borne in mind that they prefer a hot and humid climate, similar to a tropical climate. Water as needed.
COLLECTION
Once it has reached maturity, it is detached from the plant throughout the summer.
USES IN THE KITCHEN
Excellent to be dried in the sun, to make hot paprika, hot oil or even to be ground for powdered storage.
