PLANT

Jerusalem artichoke, also known as German turnip or Jerusalem artichoke (scientific name Helianthus tuberosus), is a plant belonging to the large Asteraceae family with a flower head. The stem can reach a maximum height of 3 metres. The biological form of the species is bulbous geophytes, i.e. they are herbaceous perennials that carry their buds underground. During the bad season they have no aerial organs and the buds are located in underground organs called tubers, reserve organs that annually produce new stems, leaves and flowers. Other authors define the biological form as a rhizomatous geophyte.

CULTIVATION

The plant needs no special care and the Jerusalem artichoke does not fear disease, so it does not need any phytosanitary or pesticide treatment. The water supply must be controlled by irrigating if necessary and weeding periodically.
